Vanilla bean ice cream with the chocolate toffee in it. A bit of the toffee melts as it mixes into the ice cream. And you get that chocolate toffee crunch. So happy we tried my sons idea.

My son had the idea of making a chocolate toffee. So I thought, why not. I thought maybe using cocoa powder and sugar, and make it the same way I do my toffee. So I measured 1/3 cup cocoa powder and 2/3 sugar, in about 1/2 cup water. And let it bubble away for around 8 minutes, like I do with the toffee. Well we didn't get toffee but we did get a nice chocolate syrup for our ice cream.
Take two, we tried same amount of cocoa powder, and this time used 1 cup of sugar. We mixed the cocoa powder in with 1/2 cup water. Then stored in the sugar and combined well. After it was all mixed together, I turned on the heat to high until it started bubbling. Then I turned the heat down to medium and let bubble for around 10 minutes. What we got was chocolate toffee. The Balsamic Vinegar and strawberry ice cream worked out real well. All who have tried it love the flavours. I did not tell them what flavour it was. I let them try to work it out. All were surprised but very impressed with the taste. The other ice cream I worked on was a peanut butter ice cream. I worked out its easier to dissolve the sugar in the milk and then add the peanut butter in. Less chance of getting clumps of sugar in the ice cream. My son and I love peanut butter cups, so in one of the peanut butter ice creams, I added my fudge sauce to it. I add it in layers, as I move the ice cream into a container. Very yummy combination. Had a chef recommend to me, to reduce balsamic vinegar, and use this to create an ice cream. In talking to a friend we worked out making the balsamic vinegar and add strawberries to it. Im an hour into the vinegar reduction. I will keep you posted on how this turns out. And what others say after tasting it.
A few people have asked where is a good place to buy an ice cream maker. A few friends and I have purchased ours, in Australia, from here and recommend them.
